Marinated Kale Salad

This salad couldn't get any simpler. The lemon dressing softens the kale to achieve the perfect texture.


These ingredients are:
vegetarian iconVegetarian corn-free iconCorn-free dairy-free iconDairy-free egg-free iconEgg-free gluten-free iconGluten-free peanut-free iconPeanut-free soy-free iconSoy-free tree nut-free iconTree nut-free wheat-free iconWheat-free


Place zest and lemon juice in a small bowl. Whisk in honey, oil and season with salt and pepper. Dress greens and let sit for 2 hours. Top with pumpkin and sunflower seeds and serve.

each serving: 120 cal, 10g fat (1.5g sat), 0mg chol, 40mg sodium, 8g carb, 1g fiber, 1g protein

Great way to eat raw kale

I made this for a potluck and got rave reviews! I added a bit more olive oil to tone down the sweetness. I also used more kale than was required, but the amount of marinade was still sufficient.

Update: Made this again for another potluck (my garden is bursting with kale!) and even the teenagers loved it!
