Minted Quinoa

A cool and refreshing side dish that comes together in just minutes. This quinoa salad is a perfect side for grilled chicken, fish or tofu.


These ingredients are:

Place quinoa and water in a pot and bring to a boil. Cover and reduce heat to a simmer and cook for 10 to 15 minutes. Remove from the heat and cool on a baking sheet.

In a bowl, mix olive oil and lemon juice into quinoa. Add green onions, mint, cumin, salt and pepper; mix well.
