Okara and Grain Burgers

This vegan burger recipe is a great companion to Homemade Organic Soy Milk, as it makes use of the protein-packed leftover soybean pulp.


These ingredients are:

In a large mixing bowl, combine okara, rolled oats, onions, garlic and sea salt.

Stir in broth a little at a time, until a thick, chunky batter forms. You want the burgers soft enough to hold together, but not actually wet.

Form into patties about 4" across and 1" thick.

Cook the patties over medium heat, on a well-oiled grill or in a nonstick skillet. Cook for about 5 minutes per side, until the exterior is golden and crisp and the patty is set.


These patties can be seasoned to your taste, with anything from fresh herbs to curry powder. Taste and experiment!
