Pasta with Greens and Feta

Sauté onions in olive oil until tender, about 7 minutes. Add greens, cover with a lid and cook until tender, about 7 additional minutes.

Meanwhile, cook pasta in a large pot of salted boiling water, according to package instructions, until al dente.

Toss pasta with greens, feta and olives. Season with salt and pepper.

I plan on using Jovial's rice penne with this. Bet it'll be good cold too.

Very versatile and great flavors

I added two cloves of garlic and slices of cooked PCC sundried tomato chicken sausage. I used rotini pasta, which captured more of the flavors too. Even the folks who don't usually like "greens" thought that this was a great dish.
