Second only to the potato, cabbage is the most widely grown and eaten vegetable in Ireland. The flavor and texture of red cabbage is robust and it complements other hearty foods.


These ingredients are:

Peel and chop the onion. Heat the oil in a large saucepan and cook the onion over medium heat for about 5 minutes, or until softened and translucent.

Stir all the remaining ingredients into the onion and bring to a boil. Continue stirring until the jelly dissolves.

Reduce heat to low, cover the pan, and simmer gently until the cabbage is tender, about 20 minutes. Adjust seasonings and serve hot.
