Tea Sandwiches

These sandwiches are wonderful for an afternoon tea party with friends or as a special lunchbox theme — pack with a scone, sliced fruit and some hot tea in a thermos!

Ingredients

  • 1/4 cup cream cheese or hummus, at room temperature Add to list
  • 1 teaspoon chopped fresh herbs (try dill, chive, mint or a combination) Add to list
  • Salt and pepper, to taste Add to list
  • 4 thin slices whole-grain sandwich bread Add to list
  • 1/2 English cucumber, thinly sliced Add to list

Preparation

In a small bowl, combine cream cheese or hummus, herbs, salt and pepper. Divide spread between 2 bread slices. Top with sliced cucumbers and remaining bread. Trim the crusts and make 2 diagonal cuts on each sandwich to form 4 triangles.

Notes

Make open-faced tea sandwiches! Use small flower-shaped cookie cutters to cut out fun shapes from the cucumber.

Each serving: 60 cal, 3g fat (1.5g sat), 10mg chol, 160mg sodium, 6g carb, 1g fiber, 2g protein
