Lundberg Organic California White Sushi Rice
Akitakomachi is a classic Japanese short grain rice grown especially for Sushi rice.
Preparation: Rinse, drain, cover 1 cup rice with 1 1/2 cups water & a pinch of salt. Simmer, covered 15- 20 minutes. Let rest for a few minutes. To further prepare for Sushi, combine 1 Tbl rice vinegar and 1 1/2 Tbl sugar in a small saucepan. Heat until sugar dissolves. Toss hot rice gently with vinegar mixture.
Yield: about 3/4 cup per 1/4 cup uncooked rice.
