Grass-fed beef at PCC
For beef with a rounded, nuanced flavor, grass-fed can't be beat. Beyond great taste, grass-fed beef is leaner than grain-fed beef and boasts higher levels of omega-3 fatty acids, the bonus of a diet rich in forage.
We offer two delicious 100-percent grass-fed options: SunFed Ranch Grass-fed Beef and SunFed Ranch Organic Grass-fed Beef, raised on pastures in Oregon and Northern California.
The number one tip: don't overcook! Grass-fed beef is leaner than grain-fed, making it easier to dry out if cooked too long or at too high of temperature. Grass-fed beef takes 30 percent less time to cook and it’s best served medium-rare.
Not a fan of medium-rare beef? Opt for cuts made for braising or stews, like chuck roasts, which benefit from low and slow techniques that involve liquid. In the case of grass-fed, the lower and slower the better — if you're using a slow cooker, set it as low as possible and give it extra cooking time to fully tenderize.
